Mamie's Little Quiches

Ingredients

  • 1 roll Mamie’s Tuscan Wafers
  • 4 green onions, trimmed and chopped
  • 1 1/2 cups shredded Swiss cheese
  • 2 cups milk
  • 8 eggs
  • 1 1/2 teaspoon Dijon mustard or dry mustard
  • 1/4 teaspoon black pepper

Preparation

Preheat oven to 350 degrees F. Lightly grease 24 standard-size muffin tins (or use muffin tin liners).

Slice slightly thawed Mamie’s Famous Cheese Wafers dough into 24 slices. Place rounds of dough in muffin tins and bake 10 to 12 minutes.

Increase oven temperature to 375 degrees F.

Sprinkle the chopped green onions and grated Swiss cheese evenly between the muffin tins. *For alternate fillings, see below.

In a medium bowl, combine milk, eggs, mustard and pepper. Mix well and divide between the muffin tins.

Bake for 25 minutes, or until a toothpick inserted into the center of a quiche comes out clean.

Broccoli Cheddar Quiches

  • 2 heads finely chopped raw broccoli (stems removed)
  • 1 ½ cups shredded Cheddar cheese

Mushroom, Spinach, & Shallot Quiches

  • 1 ½ cups finely chopped raw mushrooms
  • 1 ½ cups loosely chopped raw spinach
  • 3-4 shallots, finely chopped

Bacon, Basil, & Sun-dried Tomato Quiches

  • 10-12 slices bacon (cooked until crunchy), finely chopped
  • 1 cup loosely chopped fresh basil
  • ¾ cup dry (not oil-packed) sun-dried tomatoes, loosely chopped

Ham & Swiss Quiches

  • 3-4 thick slices ham, finely chopped
  • 1 ½ cups shredded Swiss cheese
Tomato-Basil Tart with Mamie's Tuscan Wafers Crust

Ingredients

  • 1 roll Mamie’s Tuscan Wafers
  • 1 – 1 ½ Cups Mozzarella cheese
  • 2-3 fresh ripe tomatoes, sliced and drained
  • ½ cup chopped fresh basil
  • ¼ cup good quality olive oil
  • Kosher salt and pepper, to taste

Preparation

Preheat oven to 350 degrees. Allow roll of Mamie’s Tuscan Wafers dough to thoroughly thaw (about 30 minutes). Fit dough into a glass pie pan and bake for about 15 minutes.  Remove from oven. Sprinkle cheese in the crust.  Layer drained tomatoes over cheese.  Sprinkle with basil.  Drizzle with olive oil and add Kosher salt and pepper.  Bake 20 minutes.

Serves 6 – 8

Mamie's Famous Cheese Wafers with Crystallized Ginger

Ingredients

  • 1 roll Mamie’s Famous Cheese Wafers
  • Crystallized Ginger

Preparation

Slightly thaw and slice one 14-oz. roll of Mamie’s Famous Cheese Wafers into 42 rounds and place on baking sheets. Top each unbaked wafer with a sliver of crystallized ginger. Bake at 350° F for 10 – 12 minutes or until slightly browned.

Yield: 42 servings

Mamie's Famous Cheese Wafers with Praline Mustard Cheese & Bacon Ball

Ingredients

  • 1-14-oz. package Mamie’s Famous Cheese Wafers, baked according to package directions
  • 6 slices Nueske’s Applewood Smoked Bacon, chopped
  • 1 ½ cups Cheddar cheese, shredded
  • 8 ounces TFM cream cheese
  • 1 jar Dr. Pete’s Praline Mustard Glaze

Preparation

Cook chopped bacon in a skillet over medium-high heat until cooked through. In a mixing bowl, combine bacon with cheddar cheese, cream cheese and ¼ cup of Dr. Pete’s Praline Mustard Glaze. Form the mixture into a ball and set on serving platter. Pour the remaining Praline Mustard Glaze over the top. Slice and bake Mamie’s Famous Cheese Wafers according to the instructions on the package and serve with cheese ball.

Mamie’s Cheese Wafers with Alabama Goat Cheese Mousse

Ingredients

  • 1 14-oz. roll of Mamie’s Famous Cheese Wafers dough
  • 3 oz. Belle Chevre goat cheese
  • ½ cup plain yogurt
  • 2 T. Barber’s Heavy Cream
  • 1 t. Italian seasoning mix

Preparation

Slice and bake Mamie’s Famous Cheese Wafers according to directions on package.

For mousse: in a bowl combine softened Belle Chevre goat cheese, yogurt, cream and Italian seasoning and mix well. Add a dollop of mousse mixture to each wafer, or pipe out of bag. Serve immediately.

Yield: 42 wafers

This recipe was developed by Lauren Cole with the Alabama Department of Agriculture. It features three products from companies who participate in the “Buy Alabama’s Best” program. Mamie’s Famous Cheese Wafers are produced by Spring Hill Kitchens in Mobile, the cream is from Barber’s Dairy, and the goat cheese comes from Fromagerie Belle Chevre in Elkmont, Alabama.

Olive Stuffed Cheese Wafers

Ingredients

  • 1 14-oz. roll Mamie’s Famous Cheese Wafers dough, slightly thawed
  • 3 dozen pimento-stuffed green (Manzanilla) olives
    -Our friend, Evie Maulden, likes to subsitute black olives

Preparation

Preheat oven to 350° F. Slice the dough into 1/8-inch slices. On a lightly floured work surface, roll each slice out a bit. Place an olive in the center and mold the dough around it, pressing to seal. Place on a chilled metal baking pan (You can prepare these and hold in the refrigerator and bake just before serving if you wish). Bake in the preheated oven for 12 -15 minutes until the dough is set and the olive heated through. Eat ‘em all, stuffed; they do not keep like the cooked wafers will.

Yield: 3 dozen.

Shrimp Quiche with Tuscan Wafer Crust

Ingredients

  • 1 roll Mamie’s Tuscan Wafers (or substitute 1 roll Mamie’s Famous Cheese Wafers)
  • 1 ½ cups boiled and peeled shrimp
  • 8 ounces Swiss cheese, grated
  • ½ cup chopped onion
  • 2 T flour
  • 3 eggs, beaten
  • ¾ cup milk

Preparation

Preheat oven to 350 degrees. Allow roll of Mamie’s Tuscan Wafers dough to thoroughly thaw (about 30 minutes). Press dough into a glass pie pan and bake for about 15 minutes.  Remove from oven.  Combine shrimp, cheese, onion and flour. Mix well. Place in pie shell. Blend remaining ingredients and pour over shrimp mixture. Bake at 350 degrees for 30 minutes or until firm.

(Note: ½ pound lump crabmeat may be substituted for the shrimp.)

Serves: 6

Vidalia Onion Pie with Mamie’s Tuscan Wafers Crust

Ingredients

  • 1 roll Mamie’s Tuscan Wafers (or substitute 1 roll Mamie’s Famous Cheese Wafers)
  • 2 large or 3 small Vidalia Onions, thinly sliced
  • 1 T olive oil
  • 3 T butter
  • 2 eggs
  • 1 cup half-and-half
  • 2 T all-purpose flour
  • 1 t salt
  • 1/8 t black pepper
  • 1 pinch ground nutmeg
  • 2 ounces Gruyere or Swiss cheese, grated
  • chopped fresh parsley (optional)

Preparation

Preheat oven to 350 degrees. Allow roll of Mamie’s Tuscan Wafers dough to thoroughly thaw (about 30 minutes). Press dough into a glass pie pan and bake for about 15 minutes.  Remove from oven.
Saute onions in oil and butter over low heat until golden yellow. Beat together eggs, half-and-half, flour, salt, pepper and nutmeg, then add onions and half of the grated cheese.

Pour into prepared crust; sprinkle remaining cheese on top and bake at 375 degrees for 25 to 30 minutes, or until golden brown. Garnish with parsley, if desired.
